O\u00f9 l\u2019on y m\u00e2chait la tige de la canne pour en extraire le suc il y aurait pr\u00e8s de 10 000 ans.<\/p>\n<p>Bien plus tard, l\u2019Occident d\u00e9couvre le sucre de canne au Moyen-Age lors des croisades : la canne arrive en Italie, en Cr\u00e8te, \u00e0 Chypre et dans le sud de la France. Produit\u00a0<strong>exotique et rare. <\/strong>Il est d\u2019abord <strong>r\u00e9serv\u00e9 aux pharmaciens<\/strong>\u00a0(apothicaires) et aux\u00a0<strong>\u00e9lites. <\/strong>Chez qui il est utilis\u00e9 comme monnaie d\u2019\u00e9change, \u00e9pice et m\u00e9dicament jusqu\u2019au XVIIe si\u00e8cle. Ainsi, ne <strong>devenant r\u00e9ellement un ingr\u00e9dient pour la cuisine<\/strong>\u00a0qu\u2019au XVIIIe si\u00e8cle. Au milieu du XVIIIe si\u00e8cle, le sucre de canne devient tr\u00e8s populaire dans la bourgeoisie, on l\u2019appelle \u00ab canamelle \u00bb.<\/p>\n<p>En effet ce n\u2019est qu\u2019au d\u00e9but du XIXe si\u00e8cle que le sucre de betterave va conna\u00eetre un r\u00e9el essor et se d\u00e9mocratiser gr\u00e2ce en partie \u00e0 la r\u00e9volution industrielle.<\/p>\n<\/div>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-3\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3>Un sucre ou des sucres ?<\/h3>\n<p>Ainsi, dans une classification assez r\u00e9cente, nous avions d\u2019un c\u00f4t\u00e9 les sucres complexes d\u00e9crits comme les <strong>sucres lents. <\/strong>Et de l\u2019autre les sucres simples, d\u00e9crit comme\u00a0<strong>rapides. <\/strong>Car ne n\u00e9cessitant pas d\u2019\u00eatre d\u00e9compos\u00e9s. On s\u2019est rendu compte que \u00e7a ne fonctionnait pas tout \u00e0 fait aussi simplement dans le corps et la di\u00e9t\u00e9tique pr\u00e9f\u00e8re maintenant se r\u00e9f\u00e9rer \u00e0 l\u2019<strong>index glyc\u00e9mique. <\/strong>C\u2019est-\u00e0-dire au pouvoir glyc\u00e9miant d\u2019un aliment (son action sur le taux de sucre dans le sang) plut\u00f4t qu\u2019au fait que le sucre soit complexe ou simple.<\/p>\n<p><strong>Un sucre ayant un index glyc\u00e9mique sup\u00e9rieur \u00e0 70 est un sucre rapide<\/strong>. On s\u2019est rendu compte que la pomme de terre (qui contient de l\u2019amidon un sucre complexe) en pur\u00e9e ou encore le pain blanc ont un index glyc\u00e9mique de 80. Ils d\u00e9clenchent tr\u00e8s rapidement la r\u00e9ponse insulinique (La s\u00e9cr\u00e9tion d\u2019insuline par le pancr\u00e9as n\u00e9cessaire pour faire rentrer le sucre dans les cellules afin qu\u2019il soit transform\u00e9 en \u00e9nergie).<\/p>\n<p><strong>Un sucre ayant un index glyc\u00e9mique inf\u00e9rieur \u00e0 55 est consid\u00e9r\u00e9 comme un sucre lent<\/strong>. Avant consid\u00e9r\u00e9 comme un sucre rapide, le fructose (le sucre du fruit) est un sucre simple mais aussi un sucre lent car son index glyc\u00e9mique est inf\u00e9rieur \u00e0 55.<\/p>\n<\/div>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-4\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3 id=\"ui-id-1\" class=\"clearfix eltd-title-holder ui-accordion-header ui-state-default ui-accordion-header-active ui-state-active ui-corner-top\" tabindex=\"0\" role=\"tab\" aria-controls=\"ui-id-2\" aria-selected=\"true\" aria-expanded=\"true\"><span class=\"eltd-tab-title\"><span class=\"eltd-tab-title-inner\">41% des fran\u00e7ais sont en exc\u00e8s de sucre libre<\/span><\/span><\/h3>\n<div id=\"ui-id-2\" class=\"eltd-accordion-content ui-accordion-content ui-helper-reset ui-widget-content ui-corner-bottom ui-accordion-content-active\" role=\"tabpanel\" aria-labelledby=\"ui-id-1\" aria-hidden=\"false\">\n<div class=\"eltd-accordion-content-inner\">\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p>Le<strong>\u00a0sucre libre<\/strong>\u00a0est celui\u00a0que<strong> nous ajoutons nous-m\u00eame.<\/strong> Dans\u00a0les g\u00e2teaux ou les yaourts, le sucre blanc d\u00e9j\u00e0 pr\u00e9sent\u00a0dans les\u00a0<strong>biscuits<\/strong>, les\u00a0<strong>bonbons<\/strong>, les\u00a0<strong>sodas<\/strong>, les\u00a0<strong>desserts lact\u00e9s<\/strong>, les\u00a0<strong>glaces<\/strong>, la\u00a0<strong>p\u00e2te \u00e0 tartiner<\/strong>, la\u00a0<strong>confiture<\/strong>, etc\u2026<\/p>\n<p>Ainsi, une \u00e9tude men\u00e9 par <a href=\"https:\/\/www.inrae.fr\/\">l\u2019INRA<\/a> et <a href=\"https:\/\/www.inserm.fr\/\">L\u2019Inserm<\/a> a constat\u00e9 que la consommation moyenne de sucre libre contribue en moyenne \u00e0 9,5 % de l\u2019apport \u00e9nerg\u00e9tique des adultes. En ligne avec les recommandations de l\u2019OMS (10% des apports journaliers recommand\u00e9s). Cependant la consommation de sucres libres \u00e9tant tr\u00e8s variable \u00e0 l\u2019\u00e9chelle individuelle. On constate que <strong>4 participants sur 10<\/strong> sont en exc\u00e8s de<strong>\u00a0sucres<\/strong>\u00a0libres au regard de ces recommandations (2).<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-5\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3 id=\"ui-id-3\" class=\"clearfix eltd-title-holder ui-accordion-header ui-state-default ui-accordion-header-active ui-state-active ui-corner-top ui-state-hover\" tabindex=\"0\" role=\"tab\" aria-controls=\"ui-id-4\" aria-selected=\"true\" aria-expanded=\"true\"><span class=\"eltd-tab-title\"><span class=\"eltd-tab-title-inner\">Les risques li\u00e9s \u00e0 l&rsquo;exc\u00e8s de sucre<\/span><\/span><\/h3>\n<div id=\"ui-id-4\" class=\"eltd-accordion-content ui-accordion-content ui-helper-reset ui-widget-content ui-corner-bottom ui-accordion-content-active\" role=\"tabpanel\" aria-labelledby=\"ui-id-3\" aria-hidden=\"false\">\n<div class=\"eltd-accordion-content-inner\">\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p><strong>Outre le risque de carie<\/strong>, le sucre a plusieurs cons\u00e9quences n\u00e9fastes. Plus on le diminue, plus on prot\u00e8ge sa sant\u00e9, plus on en consomme plus on favorise :<\/p>\n<ul>\n<li>le\u00a0<strong>surpoids<\/strong>, l\u2019<strong>ob\u00e9sit\u00e9<\/strong>\u00a0et le\u00a0<strong>diab\u00e8te<\/strong>\u00a0dans lesquels sont particuli\u00e8rement incrimin\u00e9s les\u00a0<strong>sodas<\/strong>\u00a0(3).<\/li>\n<li>le risque de maladie\u00a0<strong>cardio-vasculaire<\/strong>\u00a0augmente en moyenne de 17% par boisson sucr\u00e9e suppl\u00e9mentaire consomm\u00e9e chaque jour (4).<\/li>\n<li>La consommation excessive de sucre augmenterait \u00e9galement le\u00a0<strong>risque de cancer du sein<\/strong>, de\u00a0<strong>cancer digestifs<\/strong>.<\/li>\n<li>les r\u00e9sultats des \u00e9tudes r\u00e9centes quant \u00e0 la maladie d\u2019Alzheimer sont pour l\u2019instant contradictoires donc nous emp\u00eache de conclure.<\/li>\n<\/ul>\n<p>Ainsi, une \u00e9tude publi\u00e9e dans la revue Circulation indique que la consommation quotidienne de sodas seraient \u00e0 l\u2019origine de <strong>184 000 d\u00e9c\u00e8s<\/strong> dans le monde. Dont, 133 000 li\u00e9s au diab\u00e8te, 45 000 aux maladies cardio-vasculaires et 6 450 au cancer. Si sucre est \u00e9crit en premier c\u2019est lui qui est le composant le plus important du produit\u2026.<\/li>\n<li>Je lis les \u00e9tiquettes [bis] : j\u2019\u00e9vite les produits avec du sucre ajout\u00e9 : fructose, glucose, saccharose, dextrose, maltose, lactose\u2026<\/li>\n<li>Je mange des fibres !
