Cette id\u00e9e est bouscul\u00e9e aujourdhui par les derni\u00e8res recherches en neurophysiologie. Que se passe-t-il en bouche quand nous mangeons ? Comment se construit le go\u00fbt ? Quel est le r\u00f4le de notre cerveau dans la perception du go\u00fbt ? Et le plaisir dans tout \u00e7a ? Il est \u00e9galement le seul sens qui ne peut fonctionner pleinement sans les autres sens.<\/p>\n<p>Une question qui peut sembler anodine jusqu\u2019\u00e0 ce que nous comprenions que ce que nous nommons tel au quotidien ne repose pas uniquement sur ce sens. La flaveur d\u2019un aliment ou d\u2019un mets impliquant \u00e0 la fois sa\u00a0<b>saveur<\/b>, ses\u00a0<b>ar\u00f4mes<\/b>, son\u00a0<b>odeur<\/b>, sa\u00a0<b>texture<\/b>, est le r\u00e9sultat de processus multisensoriels qui entrent en jeu, sans occulter le poids des\u00a0<b>repr\u00e9sentations<\/b>\u00a0et des\u00a0<b>souvenirs<\/b>\u00a0qui y sont potentiellement attach\u00e9s.<\/p>\n<p><b>4 saveurs primaires<\/b>\u00a0sont g\u00e9n\u00e9ralement \u00e9voqu\u00e9es :<\/p>\n<ul>\n<li><strong>S<\/strong><b>ucr\u00e9<\/b>\u00a0: seule cette saveur est inn\u00e9e. Elle est reconnue et appr\u00e9ci\u00e9e d\u00e8s l\u2019\u00e2ge du nourrisson puisqu\u2019elle est synonyme d\u2019\u00e9nergie. Elle appara\u00eet plus intens\u00e9ment \u00e0 chaud.<\/li>\n<li><strong>S<\/strong><b>al\u00e9<\/b>\u00a0: il fait ressortir le go\u00fbt des aliments dans une quantit\u00e9 limit\u00e9e et appara\u00eet \u00e9galement plus intens\u00e9ment \u00e0 chaud.<\/li>\n<li><strong>A<\/strong><b>cide<\/b>\u00a0: lors de la consommation de produit acide, un r\u00e9flexe spontan\u00e9 nous fait grimacer, sans pour autant que l\u2019aliment poss\u00e8de un mauvais go\u00fbt. Il est d\u2019autant plus ressenti que l\u2019aliment est froid.<\/li>\n<li><strong>A<\/strong><b>mer<\/b>\u00a0: saveur peu courante dans notre alimentation, elle est g\u00e9n\u00e9ralement peu appr\u00e9ci\u00e9e. Elle appara\u00eet plus intens\u00e9ment \u00e0 froid. (Ce qui fait que souvent nous n\u2019aimons g\u00e9n\u00e9ralement pas le caf\u00e9 ou le th\u00e9 froid   )<\/li>\n<\/ul>\n<p>Auxquelles s\u2019ajoutent maintenant l\u2019<b>umami<\/b>\u00a0(\u201cgo\u00fbt d\u00e9licieux\u201d en japonais), plus r\u00e9cemment le\u00a0<strong>gras<\/strong>, commen\u00e7ant \u00e0 \u00eatre consid\u00e9r\u00e9 comme une\u00a0<strong>6\u00e8me saveur<\/strong>, et enfin la saveur neutre, comme l\u2019eau, d\u2019autant qu\u2019elle a une teneur faible en min\u00e9raux.<\/p>\n<\/div>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-3\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<div class=\"wpb_column vc_column_container vc_col-sm-6\">\n<div class=\"vc_column-inner \">\n<div class=\"wpb_wrapper\">\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3><span data-sheets-value=\"{\" data-sheets-formula=\"=MAJUSCULE(GAUCHE(R&#091;-4&#093;C&#091;0&#093;;1))&amp;STXT(R&#091;-4&#093;C&#091;0&#093;;2;NBCAR(R&#091;-4&#093;C&#091;0&#093;)-1) \">Des perceptions propres \u00e0 chacun<\/span><\/h3>\n<p>Mais nous manquons cruellement de vocabulaire pour d\u00e9crire toutes les saveurs que nous d\u00e9tectons. Enfin de compte les termes \u201csal\u00e9\u201d, \u201csucr\u00e9\u201d, \u201cacide\u201d, \u201camer\u201d ou \u201c umami\u201d ne doivent pas \u00eatre consid\u00e9r\u00e9s comme des modalit\u00e9s isol\u00e9es et ind\u00e9pendantes. Mais comme de simples jalons dans un espace gustatif infiniment plus riche.<\/p>\n<p>On peut consid\u00e9rer la langue comme une\u00a0<b>empreinte digitale sensorielle. <\/b>C\u2019est-\u00e0-dire que nous avons tous des sensibilit\u00e9s diff\u00e9rentes avec une <strong>cartographie sensorielle<\/strong><strong>\u00a0personnelle<\/strong>. C\u2019est pourquoi nous ne percevons pas tous les m\u00eames saveurs au m\u00eame endroit. (Contrairement \u00e0 ce que nous pensions, nous ne ressentons pas tous la saveur sucr\u00e9e au bout de la langue par exemple).<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"wpb_column vc_column_container vc_col-sm-12 vc_col-lg-6 vc_col-md-12\">\n<div class=\"vc_column-inner vc_custom_1493024490288\">\n<div class=\"wpb_wrapper\">\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p>Nos\u00a0<strong>cellules gustatives<\/strong>\u00a0de la bouche sont situ\u00e9es principalement sur\u00a0<b>la langue<\/b>\u00a0et le\u00a0<b>voile du palais<\/b>. Ces r\u00e9cepteurs sont tr\u00e8s peu sp\u00e9cifiques. Une\u00a0<strong>mol\u00e9cule sapide<\/strong>\u00a0(qui donne le go\u00fbt) \u00e0 toutes les chances d\u2019\u00eatre compatible avec une bonne dizaine de r\u00e9cepteurs distincts et un r\u00e9cepteur donn\u00e9 peut se lier \u00e0 plusieurs dizaines de mol\u00e9cules diff\u00e9rentes.<\/p>\n<p>Ainsi, le\u00a0<strong>codage\u00a0<\/strong><strong>d\u2019une saveur<\/strong>\u00a0repose sur l\u2019activation d\u2019une\u00a0<strong>combinaison de r\u00e9cepteurs gustatifs<\/strong>. Ceci explique qu\u2019avec un nombre relativement limit\u00e9 de r\u00e9cepteurs (une trentaine diff\u00e9rent), nous sommes capables de d\u00e9tecter et de discriminer des milliers de saveurs. Quand il existe une\u00a0<strong>trentaine<\/strong><strong>\u00a0de r\u00e9cepteurs<\/strong>\u00a0impliqu\u00e9s dans le\u00a0<b>go\u00fbt<\/b>, il y a\u00a0<strong>347<\/strong><strong>\u00a0types de r\u00e9cepteurs<\/strong>\u00a0impliqu\u00e9s dans l\u2019<b>odorat\u00a0<\/b>(1)\u00a0qui couvrent une palette de sensation bien plus large.<\/p>\n<p>Quel cheminement ont ces ar\u00f4mes ? Au d\u00e9part ces mol\u00e9cules odorantes sont\u00a0<strong>soit directement\u00a0<\/strong><strong>inspir\u00e9s<\/strong>\u00a0par les narines,\u00a0<strong>soit par\u00a0<\/strong><strong>r\u00e9tro-olfaction<\/strong>\u00a0par les cavit\u00e9s nasales<b>\u00a0<\/b>une fois l\u2019alimentation mise en bouche<b>.<\/b><\/p>\n<\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p>Ces 2 voies am\u00e8nent les mol\u00e9cules volatiles en haut de nos cavit\u00e9s nasales o\u00f9 se trouve l\u2019\u00e9pith\u00e9lium olfactif. L\u2019\u00e9pith\u00e9lium est reli\u00e9 au bulbe olfactif qui transforme le message odorant en message nerveux, transmis \u00e0 son tour vers le cortex olfactif. C\u2019est alors que nous percevons l\u2019ar\u00f4me.<\/p>\n<p><b>Sans l\u2019olfaction r\u00e9tro-nasale, la perception du go\u00fbt serait spectaculairement appauvrie<\/b> ! Vous l\u2019avez tous d\u00e9j\u00e0 exp\u00e9riment\u00e9, quand vous avez un rhume, une \u00e9paisse couche de mucus recouvre les r\u00e9cepteurs olfactifs. A environ 21 semaines, le foetus est capable de diff\u00e9rencier les odeurs et les go\u00fbts auxquels il a acc\u00e8s \u00e0 travers le liquide amniotique qu\u2019il inhale et avale directement. La composition du liquide amniotique est\u00a0<b>influenc\u00e9e<\/b>\u00a0par les substances avec lesquelles la\u00a0<b>m\u00e8re<\/b>\u00a0s\u2019alimente, respire, ou qu\u2019elle applique sur la peau.<\/p>\n<p>Cette \u201csignature\u201d odorante unique d\u00e9rive des sources multiples choisis par la m\u00e8re et recr\u00e9ent en att\u00e9nu\u00e9, un reflet intra-ut\u00e9rin de l\u2019environnement ext\u00e9rieur. Par exemple, les ar\u00f4mes d\u2019ail, d\u2019anis ou de carotte passent toutes les \u00e9tapes du m\u00e9tabolisme maternel, placentaire et foetal, pour se retrouver dans le liquide amniotique. O\u00f9 ils sont potentiellement sentis et \u201cd\u00e9gust\u00e9s\u201d par le foetus. Les m\u00eames ph\u00e9nom\u00e8nes peuvent jouer avec des substances moins recommandables tels un r\u00e9gime d\u00e9s\u00e9quilibr\u00e9, l\u2019alcool ou le tabac.<\/p>\n<p>De plus, comme la cartographie gustative, la cartographie olfactive est diff\u00e9rente d\u2019un individu \u00e0 un autre. Par exemple chacun a sa <b>propre odeur corporelle<\/b>(li\u00e9e \u00e0 notre m\u00e9tabolisme et contr\u00f4l\u00e9e en partie par nos g\u00e8nes), son\u00a0<b>propre r\u00e9pertoire<\/b>\u00a0de\u00a0<b>r\u00e9cepteurs olfactifs<\/b>, ses propres\u00a0<b>exp\u00e9riences<\/b>. Au niveau des r\u00e9cepteurs olfactifs, vu la variabilit\u00e9 des g\u00e8nes, il n\u2019existe vraisemblablement pas deux \u00eatres humains qui aient les m\u00eames.<\/p>\n<p>Autrement dit, nous devrions tous sentir un m\u00eame ar\u00f4me de fa\u00e7on diff\u00e9rente.
