Mais il y a 400 000 ans, les premiers hommes ont domestiqu\u00e9 le feu : un tournant majeur dans notre \u00e9volution. Alors pourquoi passer au cru ? Cette cuisine convient-t-elle \u00e0 tout le monde ? Doit-on devenir v\u00e9g\u00e9tarien pour \u00eatre crudivore ? Elle \u00e9tait constitu\u00e9e de v\u00e9g\u00e9taux peu caloriques qu\u2019ils ing\u00e9raient tout au long de la journ\u00e9e pour nourrir ce (tr\u00e8s !) long intestin. Puis, nos anc\u00eatres se sont diff\u00e9renci\u00e9s des gorilles et ont commenc\u00e9 \u00e0 s\u2019organiser en une soci\u00e9t\u00e9 plus complexe, sociale et technique. Ce qui a r\u00e9clam\u00e9 un cerveau de plus en plus gros.<\/p>\n<p>Nos anc\u00eatres les hominin\u00e9s ont donc commenc\u00e9 il y a 1,9 millions d\u2019ann\u00e9es \u00e0 manger, d\u00e9couper et hacher de la viande crue. Avec sa densit\u00e9 nutritionnelle beaucoup plus \u00e9lev\u00e9e que les v\u00e9g\u00e9taux, la viande a permis d\u2019assimiler plus d\u2019\u00e9nergie \u00e0 la fois, n\u00e9cessitant moins de surface intestinale et des repas moins nombreux. L\u2019introduction de la viande aurait donc permis de r\u00e9duire la taille des intestins au profit de l\u2019alimentation d\u2019un cerveau de plus en plus gros.<\/p>\n<p>De plus, nos anc\u00eatres ont commenc\u00e9 \u00e0 ma\u00eetriser et utiliser le feu de fa\u00e7on constante il y a 400 000 ans. La cuisson de la viande a permis d\u2019augmenter le b\u00e9n\u00e9fice \u00e9nerg\u00e9tique, compar\u00e9 \u00e0 un morceau de m\u00eame taille cru. <strong>La cuisson a donc potentialis\u00e9 ce b\u00e9n\u00e9fice \u00e9nerg\u00e9tique<\/strong>\u00a0en \u201cpr\u00e9-transformant\u201d les aliments, nous faisant \u00e9conomiser encore des cm d\u2019intestins.<br \/>\nLe r\u00e9sultat est incontestable,<strong>\u00a0le cerveau humain est 5 fois plus gros que celui d\u2019un mammif\u00e8re de m\u00eame taille.<\/strong>\u00a0(1)<\/p>\n<\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\"><\/div>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-6\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3>Il \u00e9tait une fois la rawfood ?<\/h3>\n<\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\"><\/div>\n<\/div>\n<\/div><div class=\"fusion-text fusion-text-7\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p>La vague de rawfood ou\u00a0<strong>alimentation vivante<\/strong> d\u00e9ferle sur la France. Certes avec un temps de retard sur ses voisins mais notre pays se rattrape avec le nombre croissant de bars \u00e0 jus, livres de recettes ou encore restaurants \u201ccrus\u201d. Nos voisins Europ\u00e9ens comme l\u2019Angleterre, l\u2019Allemagne, la Belgique et le Portugal \u00e9taient en avance sur nous en terme de restauration rawfood. La Suisse est elle tr\u00e8s active et il existe \u00e0 Gen\u00e8ve autant des bars \u00e0 jus que des \u201cfrawmageries\u201d (fromage d\u2019origine v\u00e9g\u00e9tale cru).<\/p>\n<p>Pourquoi la rawfood ? Les adeptes avancent, \u00e0 juste titre, que <strong>les micronutriments et les enzymes sont d\u00e9truits \u00e0 la cuisson<\/strong> ( au del\u00e0 de 45\u00b0), d\u00e9gradant ainsi la qualit\u00e9 nutritionnelle de nos aliments. Par l\u2019exc\u00e8s de cuisson, nous avalons des aliments morts, sans vitalit\u00e9, contrairement \u00e0 l\u2019alimentation crue, dite \u201cvivante\u201d.<\/p>\n<p>La di\u00e9t\u00e9tique moderne passe souvent son temps \u00e0 d\u00e9crire des r\u00e9gimes au travers de ratios de macronutriments : les glucides, les lipides, les prot\u00e9ines. Alors <strong>consommer un aliment sans le cuire, c\u2019est avant tout s\u2019int\u00e9resser \u00e0 sa richesse en micronutriments<\/strong> : vitamines, min\u00e9raux, antioxydants et enzymes. Autrement dit, tous ces produits essentiels que certains vont trop souvent chercher dans les compl\u00e9ments alimentaires.<\/p>\n<\/div>\n<p>Remarquons aussi que\u00a0<strong>la qualit\u00e9 de l\u2019aliment cru<\/strong>\u00a0d\u00e9pend de\u00a0<strong>la qualit\u00e9 du sol et la qualit\u00e9 de la production,<\/strong> qui seront des crit\u00e8res d\u00e9terminants. En effet, les min\u00e9raux contenus dans le poireaux ou encore la carotte que vous consommez d\u00e9pendra des min\u00e9raux contenus dans le sol. Si le sol est mort du fait d&rsquo;une agriculture intensive, il y aura peu de min\u00e9raux. Si le sol est vivant et riche gr\u00e2ce \u00e0 une agriculture raisonn\u00e9e ou biologique, les min\u00e9raux seront en plus grande quantit\u00e9.<\/p>\n<p>Par ailleurs, la cuisson \u00e0 haute temp\u00e9rature provoque\u00a0<strong>la formation de compos\u00e9s toxiques<\/strong>. Ce ph\u00e9nom\u00e8ne se produit par la recombinaison de certaines macromol\u00e9cules entre elles. Par exemple, la recombinaison d\u2019une prot\u00e9ine et d\u2019un sucre ensemble forme la \u201cmol\u00e9cule de Maillard\u201d, compos\u00e9 toxique. Et quand on fait roussir des pommes de terre dans une po\u00eale, la bonne odeur de grill\u00e9 qui se d\u00e9gage correspond aux acrylamides form\u00e9s, compos\u00e9 carcinog\u00e8ne.<\/p>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-8\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3>Alors le cru, la panac\u00e9e ?<\/h3>\n<\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\"><\/div>\n<\/div>\n<\/div><div class=\"fusion-text fusion-text-9\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p>Pour certain, le \u201ccru fatigue\u201d, le \u201ccru fait maigrir\u201d ou le cru est \u201cdifficile \u00e0 dig\u00e9rer\u201d.<\/p>\n<p><strong>Tout d\u00e9pend de la personne<\/strong>, de sa physiologie, mais aussi de sa morphologie, de ses humeurs, de sa vitalit\u00e9 et de la nature des aliments qu\u2019il ing\u00e8re. Ce qui ira pour une personne n\u2019ira pas forc\u00e9ment pour une autre. Il suffit d&rsquo;\u00e9couter son corps et r\u00e9aliser une petite transition tout en douceur, \u00e0 son rythme. Pour cela, il est n\u00e9cessaire d&rsquo;acqu\u00e9rir un nombre de connaissances permettant de ne pas suivre aveugl\u00e9ment une mode, mais plut\u00f4t de comprendre ce qui est bon pour nous. Alors oui, on a tout \u00e0 gagner \u00e0 ajouter une part plus ou moins importante d\u2019alimentation cru, brute et non transform\u00e9e dans notre quotidien.<\/p>\n<p><strong>Notre flore intestinale<\/strong>\u00a0(Cf\u00a0<a href=\"https:\/\/www.hellocare.com\/blog\/microbiote\/\" target=\"_blank\" rel=\"noopener noreferrer\">article microbiote<\/a>) \u00e9tant habitu\u00e9e \u00e0 notre style de vie, il est possible que si vous souhaitez apporter une part plus importante de cru dans votre alimentation, il y ait une p\u00e9riode d\u2019adaptation et de d\u00e9sintoxication. Dans notre alimentation moderne nous mangeons du riz et des p\u00e2tes en grande quantit\u00e9. Les intestins sont donc tapiss\u00e9s de cette colle apport\u00e9e par l\u2019amidon. Les aliments crus vont participer \u00e0 la \u201cd\u00e9coller\u201d des parois intestinales, ce qui peut causer les d\u00e9sagr\u00e9ments connus tels ballonnements, maux de ventre.<\/p>\n<p><strong>Pour vous accompagner<\/strong> dans ce changement, <strong>vous pouvez faire des jus de l\u00e9gumes \u00e0 l&rsquo;aide d&rsquo;un extracteur de jus<\/strong>. Ils permettent d\u2019augmenter le nombre de l\u00e9gumes consomm\u00e9s tout en \u00e9vitant les fibres qui donnent les sympt\u00f4mes cit\u00e9s.<\/p>\n<p>Comme toujours, le souci de la nuance doit rester de mise dans un domaine aussi complexe que la nutrition et la personnalisation de la sant\u00e9. Plus de cru, absolument. Tout cru, avec prudence.
