L\u00e0 o\u00f9 on ne l\u2019attend pas, les risques sur les exc\u00e8s de sel existent bel et bien !<br \/>\nMais alors pourquoi avons-nous commenc\u00e9 \u00e0 en consommer ? Est-on accro au sel ? Combien de gramme en faut-il vraiment par jour ? Ce n\u2019est pas un go\u00fbt inn\u00e9 comme le go\u00fbt sucr\u00e9 (voir notre article sur l\u2019<a href=\"https:\/\/www.hellocare.com\/blog\/apprentissage-du-gout\/\" target=\"_blank\" rel=\"noopener noreferrer\">apprentissage du go\u00fbt<\/a>) qui se manifeste chez le jeune enfant quand il nait. Cela s\u2019acquiert lors de l\u2019alimentation. L\u2019esp\u00e8ce humaine est la seule esp\u00e8ce de mammif\u00e8re qui consomme des aliments sal\u00e9 ajout\u00e9. Tous les aliments qu\u2019on trouve dans la nature (viande poisson, oeufs, l\u00e9gumes\u2026) contiennent naturellement du sel. Si l&rsquo;on fait la somme du sel consomm\u00e9 de fa\u00e7on naturelle \u00e0 travers les aliments au cours d\u2019une journ\u00e9e, notre consommation s\u2019\u00e9l\u00e8ve \u00e0 peu pr\u00e8s \u00e0 <b>1,5 \u00e0 2 g<\/b> par jour. C\u2019est le cas notamment des populations de chasseurs-cueilleurs actuels ainsi que de tous les autres mammif\u00e8res et de l\u2019esp\u00e8ce humaine de fa\u00e7on g\u00e9n\u00e9rale, jusqu\u2019il y a 10 000 ans.<\/p>\n<\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\"><\/div>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-4\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3>Alors, pourquoi en consomme-t-on plus ?<\/h3>\n<\/div>\n<\/div>\n<\/div><div class=\"fusion-text fusion-text-5\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p>Le sel a \u00e9t\u00e9 le premier\u00a0<b>mode de conservation<\/b>\u00a0des viandes, poissons, fromages et l\u00e9gumes gr\u00e2ce \u00e0 ces propri\u00e9t\u00e9s\u00a0<b>bact\u00e9ricides\u00a0<\/b>(Dans la saumure). Cependant des r\u00e9sidus de sel contenu dans les aliments persistaient lors de leur consommation. Le sel a ensuite \u00e9t\u00e9 introduit dans les recettes pour des raisons gustatives. Il a \u00e9galement \u00e9t\u00e9 introduit dans le pain pour le processus de panification, la couleur de la cro\u00fbte et pour sa conservation.<\/p>\n<p>Historiquement il a aussi \u00e9t\u00e9 un moyen d\u2019\u00e9change : une <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Monnaie\" target=\"_blank\" rel=\"noopener noreferrer\">monnaie<\/a> ou un imp\u00f4t. Cela se constate aujourd&rsquo;hui en <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Chine\" target=\"_blank\" rel=\"noopener noreferrer\">Chine<\/a> et en Europe gr\u00e2ce \u00e0 l\u2019<a href=\"https:\/\/fr.wikipedia.org\/wiki\/%C3%89tymologie\" target=\"_blank\" rel=\"noopener noreferrer\">\u00e9tymologie<\/a> commune des mots \u00ab sel \u00bb et \u00ab salaire \u00bb. En <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Latin\" target=\"_blank\" rel=\"noopener noreferrer\">latin<\/a> salarium, somme donn\u00e9e aux soldats pour l\u2019achat du sel.<\/p>\n<p>Aujourd&rsquo;hui, le sel est retrouv\u00e9 dans tous les plats industriels et produits transform\u00e9s. Car il augmente la sapidit\u00e9 d\u2019un plat. En d&rsquo;autres mots, notre perception du go\u00fbt.<\/p>\n<\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\"><\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\"><\/div>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-6\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3>La consommation des fran\u00e7ais<\/h3>\n<\/div>\n<\/div>\n<\/div><div class=\"fusion-text fusion-text-7\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p>Nous mangeons beaucoup trop sal\u00e9 !\u00a0<b>80% des Fran\u00e7ais sont au-dessus du seuil de l\u2019OMS<\/b>\u00a0d\u00e9clare Pierre Meneton, chercheur \u00e0 l\u2019INSERM et auteur du livre \u201c Le sel: un tueur cach\u00e9\u201d.<\/p>\n<p>Entre 1990 et 2000, la consommation moyenne de sel des Fran\u00e7ais a largement augment\u00e9. Depuis, elle est stable puisque les hommes consomment <b>8,7 grammes<\/b> de sel par jour en moyenne et les femmes et les enfants 6,7 grammes. Ou, <b>10 \u00e0 12 grammes<\/b>\u00a0pour quelqu\u2019un mangeant quotidiennement des plats industriels. \u00a0Le PNNS (programme national nutrition sant\u00e9) a pour objectif une consommation moyenne de 8 grammes de sel par jour pour les hommes et 6,5 grammes pour les femmes et les enfants. A terme, les pouvoirs publics visent les recommandations de l\u2019Organisation mondiale de la sant\u00e9, soit\u00a0<b>5 grammes par jour<\/b>.<\/p>\n<p>En effet, ses m\u00e9faits sur la sant\u00e9 sont connus depuis la fin du XIX\u00e8me si\u00e8cle. Des m\u00e9decins allemands avaient alors rep\u00e9r\u00e9 sa consommation excessive entra\u00eenait des d\u00e9g\u00e2ts sur la sant\u00e9. Cela fait particuli\u00e8rement augmenter la pression art\u00e9rielle r\u00e9gul\u00e9e par les reins, qui s\u2019ab\u00eement lorsque la pression tension art\u00e9rielle est trop \u00e9lev\u00e9e.<\/p>\n<\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\"><\/div>\n<\/div>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-bottom:5px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-8\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<h3>Des d\u00e9c\u00e8s in\u00e9vitables<\/h3>\n<\/div>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\"><\/div>\n<\/div>\n<\/div><div class=\"fusion-text fusion-text-9\"><div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<div class=\"vc_row wpb_row vc_row-fluid eltd-section eltd-content-aligment-left\">\n<div class=\"clearfix eltd-full-section-inner\">\n<div class=\"wpb_column vc_column_container vc_col-sm-6\">\n<div class=\"vc_column-inner \">\n<div class=\"wpb_wrapper\">\n<div class=\"eltd-accordion-holder eltd-accordion eltd-boxed eltd-accordion-rounded ui-accordion ui-widget ui-helper-reset\" role=\"tablist\">\n<div id=\"ui-id-4\" class=\"eltd-accordion-content ui-accordion-content ui-helper-reset ui-widget-content ui-corner-bottom ui-accordion-content-active\" role=\"tabpanel\" aria-labelledby=\"ui-id-3\" aria-hidden=\"false\">\n<div class=\"eltd-accordion-content-inner\">\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">\n<p>De ce fait, dans tous les pays \u201cd\u00e9velopp\u00e9s\u201d, les autorit\u00e9s ont demand\u00e9 \u00e0 l\u2019industrie agro-alimentaire de r\u00e9duire progressivement les apports en sel. Mais pourquoi les industriels en rajoutent-ils toujours autant ?<\/p>\n<p>\u00ab Parce qu\u2019au-del\u00e0 de son go\u00fbt, il poss\u00e8de des propri\u00e9t\u00e9s technologiques int\u00e9ressantes pour les industriels. Il permet de rehausser les saveurs sucr\u00e9es tout en inhibant les go\u00fbts amers\u201d, explique Pierre Meneton dans la revue <a href=\"https:\/\/www.lanutrition.fr\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Lanutrition.fr<\/strong><\/a>, chercheur \u00e0 l\u2019Inserm. \u201cC\u2019est pour cela qu\u2019on le retrouve dans les p\u00e2tisseries, les viennoiseries, les glaces, le chocolat et la plupart des produits sucr\u00e9s. Le sel est un \u00ab cache-mis\u00e8re \u00bb, il permet de donner du go\u00fbt \u00e0 peu de frais \u00e0 des produits de qualit\u00e9 m\u00e9diocres. \u00bb<\/p>\n<p>Mais pas de panique, les effets n\u00e9gatifs sur la sant\u00e9 sont r\u00e9versibles ! Les auteurs d\u2019une \u00e9tude anglosaxone (1) estiment qu\u2019en diminuant de 5 grammes par jour notre consommation de sel (l\u2019\u00e9quivalent d\u2019une cuill\u00e8re \u00e0 caf\u00e9), on pourrait \u00e9viter 1,25 millions de d\u00e9c\u00e8s par infarctus et presque 3 millions de morts par maladies cardiovasculaires dans le monde.<br \/>\nEn France, les derni\u00e8res recommandations datent de 2002. Le hic est qu\u2019elles sont bas\u00e9es sur le bon vouloir des industriels, ce qui est nettement insuffisant.<\/p>\n<p>Les fabricants ne sont d\u2019autant plus pas oblig\u00e9 de certifier la quantit\u00e9 de sel mais la <b>quantit\u00e9 de sodium<\/b>\u00a0sur leurs\u00a0<b>\u00e9tiquettes<\/b>. De quoi perdre le consommateur ! En effet, l\u2019absence d\u2019aliments iod\u00e9 peut perturber le bon fonctionnement de la thyro\u00efde des femmes enceintes et ainsi cr\u00e9er des d\u00e9ficients intellectuels chez leur petit (alors appel\u00e9s, cr\u00e9tins des Alpes).
