Comme le haricot, le ma\u00efs ou la pomme de terre, le quinoa faisait partie de l\u2019alimentation des civilisations pr\u00e9-colombiennes mais \u00e0 \u00e9t\u00e9 stopp\u00e9 au XVI\u00e8me si\u00e8cle lors de l\u2019invasion par les conquistadors Espagnols. Dans les ann\u00e9es 1970, les pays industrialis\u00e9s sont \u00e0 la recherche d\u2019une <b>alimentation plus saine<\/b> et s\u2019int\u00e9ressent \u00e0 cette graine, la faisant sortir de son anonymat en encourageant sa production. Par cons\u00e9quent, les Fran\u00e7ais en mangent actuellement 5000 tonnes par an, soit deux fois plus qu\u2019en 2012. En moyenne, le quinoa contient 4g de prot\u00e9ines pour 100g avec les huit acides amin\u00e9s essentiels \u00e0 la vie humaine. Alors que les c\u00e9r\u00e9ales ont un acide amin\u00e9 limitant (la lysine fait d\u00e9faut).<\/p>\n<p>Cette graine a une saveur neutre, l\u00e9g\u00e8rement noiset\u00e9e, c\u2019est pour cela qu\u2019elle se cuisine aussi bien froid en salade, chaud en accompagnement, que sucr\u00e9. Afin d\u2019obtenir une boule de p\u00e2te lisse et homog\u00e8ne, ajoutez un peu d\u2019eau. Pour \u00e9viter que la p\u00e2te ne devienne collante, n&rsquo;ajoutez pas trop d\u2019eau d\u2019un seul coup. Fonctionnez par petits ajouts successifs, entrecoup\u00e9s d\u2019un malaxage de la p\u00e2te.<\/p>\n<p>Une fois la boule de p\u00e2te form\u00e9e, \u00e9talez-la dans un plat circulaire et veillez \u00e0 la percer de petits trous \u00e0 l\u2019aide d\u2019une fourchette. Enfin, pr\u00e9cusiez la p\u00e2te environ 20 minutes dans un four chauff\u00e9 \u00e0 170 \u00b0C.<\/p>\n<p><u>Assemblage :<\/u><\/p>\n<p>Une fois cuits, r\u00e9partissez les l\u00e9gumes sur la p\u00e2te. Coupez de petits morceaux de reblochon et d\u00e9posez-les \u00e9galement. Dans un bol, cassez les \u0153ufs, salez, poivrez et battez la pr\u00e9paration avant d&rsquo;ajouter du soja.
